Vietnamese Pizza, or bánh tráng nướng, is a popular Vietnamese street food made with rice paper, egg and all sorts of different toppings. It’s super versatile and is actually really quick, easy and fun to make at home!

1 piece rice paper
1 egg
1 green onion, chopped

Heat up a cast iron skillet or nonstick skillet over medium heat.
Put a single sheet of rice paper on the skillet.
Crack the egg onto the rice paper, and gently scramble and spread it all over the rice paper using a fork or spoon.
Add chopped green onion and your desired toppings.
Top with mayonnaise and sriracha if using.
Once the egg is almost completely set, fold the pizza onto itself using a spatula.
Remove pizza from heat and cut into two halves using a pair of scissors to make it easier to eat if you like. Serve immediately. Enjoy!
Notes
In Vietnam, this pizza is traditional cooked over hot charcoal. At home you can use a cast iron skillet to recreate the high heat environment. If you don't have one, just use a normal nonstick skillet.
