NOTES
- Dashi is a Japanese soup stock. If you don’t have dashi or don’t want to buy it because you don’t use it often, you may substitute with dashi powder. Simply dissolve 0.5-1 tsp dashi powder in 240ml water to make instant dashi.
- You may substitute the soft tofu and wakame or add any other optional mix in’s such as firm tofu, tofu pocket strips, spinach, mushrooms, etc.
- Make sure you don’t overcook the soup after adding miso paste in order to preserve the taste and nutrients of miso.
