DESCRIPTION
This fall-inspired cinnamon apple pie granola is packed with rolled oats, toasted pecans and chunky dried apple pieces. Naturally sweetened with monkfruit and a touch of maple syrup, it’s low in sugar, vegan, dairy-free and oh-so-delicious!
INGREDIENTS
- 270g rolled oats
- 100g pecans
- 1 tbsp coconut oil, melted
- 3 tbsp almond butter
- 1 tsp maple syrup
- 2 tsp cinnamon
- 1/2 tsp monk fruit concentrate
- 1/2 tsp salt
- 50g dried apple
INSTRUCTIONS
- Preheat oven to 350°F / 180°C and line a baking tray with parchment paper.
- In a large mixing bowl, mix together rolled oats, pecans and 1.5 tsp cinnamon.
- In another mixing bowl, mix together melted coconut oil, almond butter, maple syrup, monkfruit concentrate and salt until combined.
- Drizzle wet mixture over dry mixture and toss to combine.
- Transfer mixture to lined baking tray and bake for 10-15 minutes or until golden.
- Remove granola from the oven and let cool completely.
- Meanwhile, cut dried apple into 0.4 inch cubes using kitchen scissors. Then toss in the remaining 1/2 tsp cinnamon to coat evenly.
- When granola is completely cool, stir in cinnamon apple pieces. Store granola in an airtight container in a cool and dry place in the pantry. Enjoy!
NOTES
- Enjoy this granola with yogurt, milk, in a parfait or sprinkle it on top of a smoothie bowl!
- Store granola in an airtight container in a cool, dry spot in the pantry for up to 2-3 weeks.
- Make sure your granola is completely cool before mixing in the dried apple.
- Feel free to substitute almond butter with any other neutral-tasting nut or seed butter.
- I like to combine sweeteners for better taste, but feel free to substitute monkfruit concentrate and/ or maple syrup with any other sweetener of choice to suit your dietary needs.
