Balsamic Honey Roasted Carrots

DESCRIPTION

INGREDIENTS

  • 700g carrots
  • 1 tbsp olive oil
  • 2 tbsp honey
  • 2 tbsp balsamic vinegar
  • Salt, to taste
  • Pepper, to taste

INSTRUCTIONS

  1. Preheat oven to 400°F / 200°C.
  2. Wash and dry carrots. Cut into halves lengthwise.
  3. In a small bowl, mix together olive oil, honey, balsamic vinegar, salt and pepper until combined.
  4. Transfer carrots to a nonstick baking dish. Drizzle balsamic mixture all over, and toss to coat evenly.
  5. Roast carrots for 40-45 minutes, flipping once halfway. They are done when tender and the glaze is nicely caramelized.
  6. Optional - sprinkle chopped [Tamari Almonds](https://chloeting.com/recipes/tamari-almonds) on top. Serve immediately. Enjoy!

NOTES

  • If your carrots are very large, cut them lengthwise into quarters instead.
  • Vegans may substitute honey with agave syrup, dandelion honey or a vegan honey substitute.
  • Make sure you use a good quality balsamic vinegar for this as it will make a huge difference in flavor!
