Balsamic Honey Roasted Carrots

DESCRIPTION
INGREDIENTS
- 700g carrots
- 1 tbsp olive oil
- 2 tbsp honey
- 2 tbsp balsamic vinegar
- Salt, to taste
- Pepper, to taste
INSTRUCTIONS
- Preheat oven to 400°F / 200°C.
- Wash and dry carrots. Cut into halves lengthwise.
- In a small bowl, mix together olive oil, honey, balsamic vinegar, salt and pepper until combined.
- Transfer carrots to a nonstick baking dish. Drizzle balsamic mixture all over, and toss to coat evenly.
- Roast carrots for 40-45 minutes, flipping once halfway. They are done when tender and the glaze is nicely caramelized.
- Optional - sprinkle chopped [Tamari Almonds](https://chloeting.com/recipes/tamari-almonds) on top. Serve immediately. Enjoy!
NOTES
- If your carrots are very large, cut them lengthwise into quarters instead.
- Vegans may substitute honey with agave syrup, dandelion honey or a vegan honey substitute.
- Make sure you use a good quality balsamic vinegar for this as it will make a huge difference in flavor!
