DESCRIPTION

A breakfast parfait that is filled with juicy fresh berries, homemade sugar-free granola and protein-packed yogurt. The perfect quick and easy breakfast for when you have a busy day ahead!

INGREDIENTS

  • 200g fat-free Greek yogurt
  • 250g strawberries
  • 100g raspberries
  • 5 drops monk fruit concentrate
  • 1 tbsp water

Sugar-Free Strawberry Granola

  • 200g rolled oats
  • 40g sliced almonds
  • 40g coconut flakes
  • 40g chopped pistachios
  • 2 tbsp ground flaxseed
  • 5 tbsp water
  • 2 tbsp almond butter
  • 1 tsp vanilla extract
  • 4 tbsp monk fruit erythritol sweetener
  • Pinch of salt
  • 20g freeze dried strawberries

INSTRUCTIONS

  2. Wash and dry strawberries and raspberries. Slice half of the strawberries and dice half of them.
  3. Make strawberry compote. Place diced strawberries and water in a microwave-safe container with a lid. Microwave on high for 2 minutes, stopping halfway to give it a stir. Let cool and sweeten to taste with monkfruit concentrate.
  4. Arrange sliced strawberries neatly in parfait glass. Place half the granola at the bottom of the glass, followed by yogurt, raspberries, and strawberry compote. Finally, top with the rest of the granola and more fresh raspberries. Enjoy!

NOTES

  • Feel free to substitute monkfruit concentrate with any other sweetener of choice.
  • Feel free to use any other berries you like such as blueberries or blackberries!
  • For vegan/ dairy-free, substitute Greek yogurt with coconut yogurt or any other plant-based yogurt of choice.
