DESCRIPTION
INGREDIENTS
Panna cotta
- 1 tsp powdered gelatin
 - 20ml water
 - 40ml oat milk
 - 100ml coconut milk
 - 1 tsp vanilla extract
 - 100g monk fruit erythritol sweetener
 - Coconut oil (for greasing)
 
Berry compote
- 100g mixed berries
 - 1 tbsp maple syrup
 
INSTRUCTIONS
Make panna cotta
- Lightly grease 2 ramekins with coconut oil.
 - Add water to a bowl and sprinkle gelatin all over. Stir to combine and allow gelatin to bloom for 5 minutes.
 - Meanwhile, add coconut milk, oat milk and monkfruit erythritol sweetener to a pot. Heat over low heat, while stirring, until mixture starts to steam. Do not let it come to a boil. Remove from heat.
 - Stir in bloomed gelatin until completely dissolved.
 - Stir in vanilla extract.
 - Pour mixture into the greased ramekins and chill in the fridge overnight or until completely set.
 
Make berry compote
- Put berries and maple syrup in a microwave-safe bowl and cover with a microwave-safe lid or plate. Remember to leave a little gap for steam to escape.
 - Microwave for 1 minute, stir gently, then microwave for another minute.
 - Let cool slightly then transfer to the fridge to chill overnight.
 
Assemble
- Unmold panna cotta onto a plate and spoon berry compote on top. Enjoy!
 
NOTES
- Make sure you use full fat coconut milk that has no other additives for this recipe. Make sure it’s coconut milk, not coconut cream.
 - Feel free to substitute oat milk with any other plant based milk.
 - Feel free to substitute monkfruit erythritol sweetener with any other sweetener of choice.
 - To make this vegan, simply replace gelatin with agar agar. The texture will turn out slightly different but it will still be delicious!
 - You can skip the greasing step if you’re not planning to unmold the panna cotta.
 - If you’re having trouble unmolding the panna cotta from the ramekins, fill a large bowl with hot water and place the ramekins inside for a few seconds, and then if necessary, gently insert a knife to loosen the sides of the panna cotta. It should slide right out.
 - Take care not to burn yourself when removing the berry compote from the microwave! It will be hot and there will be hot steam!
