Crispy Buffalo Chicken Wraps

DESCRIPTION

A healthy, high-protein wrap made with crispy, homemade baked chicken nuggets, fresh veggies and a smoky buffalo sauce. Perfect for a quick and easy lunch!

INGREDIENTS

Wraps

  • 2 high-protein, whole grain wraps
  • 50g salad greens
  • 1/2 tomato
  • 1/2 avocado
  • 40g light shredded cheese

Healthy Chicken Nuggets

  • 500g chicken mince
  • 1 tbsp cornstarch
  • 80ml cold water
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 90g panko crumbs, lightly crushed

Buffalo sauce

  • 2 tbsp hot sauce
  • 1 tbsp tahini
  • 1 tsp soy sauce
  • 1 tsp monk fruit erythritol sweetener
  • 1/2 tsp white vinegar
  • 1/8 tsp garlic powder

INSTRUCTIONS

  2. Make buffalo sauce by mixing all sauce ingredients in a small bowl until combined.
  3. Slice tomato and avocado.
  4. Cut chicken nuggets into halves.
  5. Assemble wraps by placing on each wrap: handful of salad greens, tomato, avocado, chicken nuggets, cheese and a drizzle of buffalo sauce. Wrap it up tightly and cut into halves. Enjoy!

NOTES

  • Feel free to switch up the fillings! Use any veggies you like. Julienned carrots, bell peppers, cucumber or sprouts are also great in this wrap.
  • Feel free to adjust the amount of hot sauce according to your spice preference.
