Crispy Buffalo Chicken Wraps

DESCRIPTION
A healthy, high-protein wrap made with crispy, homemade baked chicken nuggets, fresh veggies and a smoky buffalo sauce. Perfect for a quick and easy lunch!
INGREDIENTS
Wraps
- 2 high-protein, whole grain wraps
- 50g salad greens
- 1/2 tomato
- 1/2 avocado
- 40g light shredded cheese
Healthy Chicken Nuggets
- 500g chicken mince
- 1 tbsp cornstarch
- 80ml cold water
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/8 tsp black pepper
- 90g panko crumbs, lightly crushed
Buffalo sauce
- 2 tbsp hot sauce
- 1 tbsp tahini
- 1 tsp soy sauce
- 1 tsp monk fruit erythritol sweetener
- 1/2 tsp white vinegar
- 1/8 tsp garlic powder
INSTRUCTIONS

- Make buffalo sauce by mixing all sauce ingredients in a small bowl until combined.
- Slice tomato and avocado.
- Cut chicken nuggets into halves.
- Assemble wraps by placing on each wrap: handful of salad greens, tomato, avocado, chicken nuggets, cheese and a drizzle of buffalo sauce. Wrap it up tightly and cut into halves. Enjoy!
NOTES
- Feel free to switch up the fillings! Use any veggies you like. Julienned carrots, bell peppers, cucumber or sprouts are also great in this wrap.
