Easy Soba Stir-Fry with Chicken

DESCRIPTION
This easy soba stir-fry takes literally less than 10 minutes to throw together. Loaded with veggies and chicken and a delicious low sugar sesame soy sauce, this recipe will become one of your go-to's for when you need dinner in a pinch.
INGREDIENTS
- 200g chicken breast
- 90g soba noodles
- 350g mixed vegetables, julienned
- 1/2 tbsp olive oil
Sauce:
- 2 tbsp low-sodium soy sauce
- 1/2 tbsp sesame oil
- 1/4 garlic powder
- 1/4 tsp ginger powder
- 1/2 tbsp maple syrup
- Stevia, to taste
INSTRUCTIONS
- In a mixing bowl, combine all sauce ingredients.
- Cut chicken breast into strips, and marinade in the sauce for 5-10 minutes.
- While chicken is marinating, cook soba noodles according to package instructions.
- Drain cooked soba noodles and rinse under cold water to wash off excess starch.
- Heat up olive oil in a skillet over medium heat. Add chicken and cook until slightly brown.
- Add julienned vegetables to skillet and cook for 3-5 minutes. Stir often and add a little bit of water if needed, 1 tbsp at a time. You want there to be a little bit of sauce but not like a stew!
- When vegetables are cooked, turn off the heat and add soba noodles to skillet. Toss until everything is combined. Serve and enjoy!
NOTES
- I didn't specify what vegetables to use in the ingredients because the beauty of this recipe is you can use whatever vegetables you like or have on hand! It's the perfect "clean-out-the-fridge" recipe.
- I used a mix of red bell pepper, white cabbage, red cabbage, red onion, carrot, corn and spinach.
- You can use any other proteins you like instead of chicken. Tofu or tempeh would be a good vegetarian substitute.
- You can substitute soy sauce with tamari.
- You can substitute maple syrup and stevia with other sweeteners of choice.
