Greek Baked Salmon

DESCRIPTION
This Greek inspired Baked Salmon dish is quick and easy enough to throw together for a weekday meal. Loaded with omega-3, protein and lots of fresh veggies, it’s the perfect nutritious and refreshing dish for the warmer weather!
INGREDIENTS
- 4 salmon fillets
- 2 tomatoes
- 1 cucumber
- 1 green bell pepper
- 1/2 red onion
- 50g kalamata olives
- 180g reduced-fat feta cheese
- 1 lemon, juiced
- 1 tbsp extra virgin olive oil
- 1 clove garlic,
- 1/2 tsp dried oregano
- Salt, to taste
- Pepper, to taste
INSTRUCTIONS
- Preheat oven to 375°F / 190°C.
- Pat dry salmon fillets and season with salt and pepper. Place on baking tray and bake for 15-20 minutes or until desired doneness.
- While salmon is baking, prepare your toppings. Dice tomatoes, cucumber, bell pepper, onion, olives and feta cheese. Mince garlic. Transfer everything to a large mixing bowl.
- Add lemon juice, extra virgin olive oil and oregano. Toss until everything is well combined. Taste and season with salt and pepper if necessary.
- When the salmon fillets are done, transfer them to the serving plates. Top each one with the feta mixture. Enjoy!
NOTES

- Go easy on the salt when seasoning the toppings as the feta and olives can be quite salty already.
- English cucumber is preferred for this recipe.
