Greek Baked Salmon

DESCRIPTION

This Greek inspired Baked Salmon dish is quick and easy enough to throw together for a weekday meal. Loaded with omega-3, protein and lots of fresh veggies, it’s the perfect nutritious and refreshing dish for the warmer weather!

INGREDIENTS

  • 4 salmon fillets
  • 2 tomatoes
  • 1 cucumber
  • 1 green bell pepper
  • 1/2 red onion
  • 50g kalamata olives
  • 180g reduced-fat feta cheese
  • 1 lemon, juiced
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic,
  • 1/2 tsp dried oregano
  • Salt, to taste
  • Pepper, to taste

INSTRUCTIONS

  1. Preheat oven to 375°F / 190°C.
  2. Pat dry salmon fillets and season with salt and pepper. Place on baking tray and bake for 15-20 minutes or until desired doneness.
  3. While salmon is baking, prepare your toppings. Dice tomatoes, cucumber, bell pepper, onion, olives and feta cheese. Mince garlic. Transfer everything to a large mixing bowl.
  4. Add lemon juice, extra virgin olive oil and oregano. Toss until everything is well combined. Taste and season with salt and pepper if necessary.
  5. When the salmon fillets are done, transfer them to the serving plates. Top each one with the feta mixture. Enjoy!

NOTES

  • Serve this dish with a side of leafy greens or your favorite side dish such as [Balsamic Glazed Brussels Sprouts](https://chloeting.com/recipes/balsamic-glazed-brussels-sprouts) or [Baked Spaghetti Squash](https://chloeting.com/recipes/baked-spaghetti-squash) for a more filling meal!
  • Go easy on the salt when seasoning the toppings as the feta and olives can be quite salty already.
  • English cucumber is preferred for this recipe.
