Grilled Salmon with Caramelized Onion

DESCRIPTION

Slow cooked caramelized onion is the perfect way to dress up basic grilled salmon! Served alongside some salad or steamed vegetables and you’ve got yourself an easy and nutritious dinner that looks like it could be served at a fancy restaurant.

INGREDIENTS

  • 1 tbsp extra virgin olive oil
  • 1 yellow onion
  • 2 cloves garlic
  • 1 tsp soy sauce
  • 1 tsp lemon juice
  • 2 salmon fillets
  • Salt, to taste
  • Pepper, to taste

INSTRUCTIONS

  1. Preheat oven to 450°F / 230°C.
  2. Finely mince garlic and thinly slice onion.
  3. Heat up olive oil in a nonstick skillet over medium-low heat. Add garlic and onion and cook for 20-30 minutes or until onions are caramelized, stirring occasionally.
  4. Meanwhile, season salmon fillets generously with salt and pepper. Place salmon on a nonstick baking sheet and bake for 10-15 minutes or until salmon is cooked to your liking.
  5. When onion is caramelized, add soy sauce and lemon juice and stir to combine. Remove from heat and keep warm.
  6. When salmon is cooked, spoon the caramelized onion on top of salmon fillets. Sprinkle with extra black pepper if desired. Serve immediately. Enjoy!

NOTES

  • Switch the oven to grill for the final few minutes of cooking if you want some nice golden color on the salmon.
  • For an extra quick dinner, make a big batch of the caramelized onion ahead of time and keep it in the fridge so you have it on hand throughout the week to dress up any protein. Simply warm up in the microwave or stovetop before serving.
