Healthy Zucchini Fritters

DESCRIPTION
INGREDIENTS
Zucchini Fritters:
- 1 large zucchini
- 1 egg
- 3 tbsp oat flour
- 30g shredded cheese
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp sweet paprika
- 1/4 tsp salt
- 1/8 tsp black pepper
- Cooking spray
Toppings:
- Smoked salmon
- Avocado
- Light sour cream
INSTRUCTIONS
- Preheat the oven to 200°C / 400°F and lightly grease a nonstick baking sheet.
- Grate zucchini using a box grater.
- Place grated zucchini in a bowl and sprinkle with salt. Mix and leave for 5 minutes.
- Transfer zucchini to a clean tea towel. Wrap it up and squeeze out as much liquid as possible. Discard the liquid.
- In a large mixing bowl, mix together zucchini, egg, oat flour, shredded cheese and all the seasonings until combined.
- Take a large spoonful of mixture and shape into a patty with your hands. Repeat until all mixture is used.
- Arrange fritters in one layer on the greased baking sheet. Spray the top of each fritter lightly with cooking spray.
- Bake for 10 minutes, flip, then bake for 10 more minutes or until golden brown on both sides.
- Top zucchini fritters as desired and serve immediately. Enjoy!
NOTES
- Make sure you don’t skip the step to squeeze out all the liquid from the shredded zucchini as this is essential for getting crispy fritters!
- If you like, you can also pan fry these zucchini fritters in a nonstick skillet.
- You may omit the cheese or substitute with a plant-based alternative if you can’t take dairy.
- You may substitute oat flour with any other all purpose flour.
- Feel free to change up the toppings! Some other suggestions are: poached egg, sautéed spinach, ham, bacon etc.
