Hidden Veggie Red Sauce

DESCRIPTION

This delicious red sauce has 7 different vegetables hidden in it! Perfect for fussy eaters and a great way to sneak more vegetables into your meals. Other than using it as a pasta sauce, you can also use it to dress meat or fish or as a soup base!

INGREDIENTS

  • 1 onion
  • 4 cloves garlic
  • 800g canned tomatoes
  • 2 stalks celery
  • 1 carrot
  • 1 red bell pepper
  • 1 leek
  • 1 zucchini
  • 240ml vegetable stock
  • 2 tbsp tomato paste
  • 1 tsp Italian herbs
  • 1 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

INSTRUCTIONS

  1. Mince garlic. Dice onion, celery, carrot, bell pepper, leek and zucchini.
  2. In a large nonstick saucepan or soup pot, heat up olive oil over medium heat. Add onion, celery, carrot and garlic and sauté for about 5 minutes.
  3. Add bell pepper, leek and zucchini and sauté for another 10 minutes.
  4. Stir in tomato paste and sauté for 2 minutes.
  5. Add Italian herbs and vegetable stock or water. Stir to combine. Cover and let simmer over low heat for 20 minutes.
  6. Let cool slightly then transfer everything to a blender and blend until smooth. Alternatively, you may use an immersion blender.
  7. Season to taste with salt and pepper. Serve immediately with pasta or use it to dress protein of choice.
  8. Let cool completely before storing in airtight containers in the fridge or freezer.

NOTES

  • Sauce will keep in the fridge for up to 3 days or in the freezer for up to 3 months.
  • Other than using this sauce as a pasta sauce, you can also use it to dress meat or fish or as a soup base!
  • Using vegetable stock will give the sauce more flavor. However, you may also just use water and season with additional salt and pepper.
