Lemon Garlic Chicken Zoodles

DESCRIPTION
Chicken coated in a lemon garlic butter sauce served with zucchini noodles. A flavorful, low-carb, high-protein meal that can be whipped up in no time. It’s meal-prep friendly too!
INGREDIENTS
- 400g chicken breast
- 4 zucchini
- 1 onion
- 4 cloves garlic
- 1 lemon, juiced
- 1 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 2 tbsp butter
- Salt, to taste
- Pepper, to taste
INSTRUCTIONS
- Dice chicken and onion. Mince garlic. Spiralize zucchini into zoodles.
- Heat up butter in a large nonstick skillet over medium heat. Add onion and garlic and cook until fragrant.
- Increase heat to medium-high. Add chicken and cook until golden on all sides, stirring occasionally.
- Add lemon juice, Worcestershire sauce, soy sauce, salt and pepper. Stir until combined and continue cooking until most of the liquid has evaporated.
- Remove chicken from the skillet and keep warm. Add spiralized zucchini to skillet and cook over medium-high heat until tender, season to taste with salt and pepper.
- Add chicken back to the skillet and toss everything together until combined. Serve immediately. Enjoy!
NOTES
- To make this meal more satiating, you can toss in 1 serving (2oz / 56g) of cooked wholewheat/ gluten-free spaghetti.
- If you don't like zoodles, you can also serve this lemon garlic chicken with steamed rice or noodles. Just make sure to have some steamed vegetables on the side for a balanced meal!
