Matcha Latte with Mini Taro Balls

DESCRIPTION
Inspired by a similar drink from Machi Machi, these sugar-free mini taro balls are deliciously chewy and a great alternative to normal boba. Serve with matcha latte or your favorite tea of choice!
INGREDIENTS
Taro Balls
- 75g taro
- 30g tapioca flour
- 2 tsp monk fruit erythritol sweetener
- 1 tbsp hot water
Matcha Latte
- 1.5 tsp matcha powder
- 1 tbsp hot water
- 1 tbsp maple syrup (optional)
- 240ml oat milk
- 4-5 ice cubes
INSTRUCTIONS
- Peel and cut taro into 1 inch pieces.
- Steam taro for 15 minute or until tender (when you can easily poke through it with a fork).
- Transfer taro to a bowl and mash with a fork while it’s still warm.
- Stir in tapioca flour and stevia.
- Stir in hot water. Using your hands, knead mixture into a dough. Then, shape the dough into little round balls. After all the dough is used up, lightly dust the taro balls with some tapioca flour. Get rid of excess tapioca flour using a sieve.
- Prepare an ice bath.
- Bring a large pot of water to a boil. Add taro balls and cook for 1 minute or until they float. Drain and transfer to ice bath immediately. Drain again and the taro balls are ready for use.

NOTES
- Serve these mini taro balls with matcha latte or your favorite drink of choice! Some other ideas are: black milk tea, earl grey milk tea, peach oolong tea, etc.
- Feel free to substitute monkfruit erythritol sweetener with any other granulated sweetener of choice.
- Feel free to make the matcha latte with any milk of choice that suits your dietary requirements eg. skim milk, non-fat milk, soy milk etc.
