DESCRIPTION
These no-bake peanut butter chocolate chip protein balls are the perfect gluten-free, dairy-free vegan treats for a quick snack or breakfast on-the-go. Only 6 ingredients required, and no need for protein powder!
INGREDIENTS
- 80g rolled oats
- 125g natural peanut butter
- 9 tbsp ground flaxseed
- 3 tbsp maple syrup
- 30g sugar-free chocolate chips
- 1/2 tsp vanilla extract
INSTRUCTIONS
- In a large mixing bowl, add rolled oats and ground flaxseed and mix until combined.
- Add peanut butter and maple syrup to a microwave-safe bowl. Microwave on high for 30 seconds or until peanut butter has melted. Add mixture to rolled oats along with vanilla extract. Mix very well until combined.
- Mix in chocolate chips.
- Using your hands, shape mixture into small balls.
- Enjoy right away or store in an airtight container in the fridge.
NOTES
- The balls will keep in an airtight container in the fridge for 1 week or in the freezer for up to 3 months.
- When shaping them into balls, you can use a measuring spoon to scoop the mixture to keep all the balls the same size.
- To make these completely sugar-free, substitute maple syrup with a sugar-free syrup.
- Feel free to substitute peanut butter with any other nut or seed butter of choice.
- I used a mixture of sugar-free dark and white chocolate chips but feel free to use whatever you have on hand instead. Other add-in’s such like chopped nuts or dried fruit would also be nice!
