Pizza Omelette

DESCRIPTION
Who would have thought pizza would make a good breakfast? This pizza omelette is delicious, high in protein and so easy to make. It’s super versatile and you can switch up the toppings however you like!
INGREDIENTS
- 4 eggs
- 2 tbsp tomato passata
- 1/4 tsp dried oregano
- 6 slices pepperoni
- 30g shredded cheese
- 2 black olives, sliced
- 1/4 tsp olive oil
- Salt, to taste
- Pepper, to taste
INSTRUCTIONS
- Mix tomato passata and dried oregano in a small bowl and set aside.
- Beat eggs in a bowl with a pinch of salt and pepper.
- Heat up olive oil in an oven-safe skillet over medium-low heat.
- Add beaten eggs and cook, covered, until eggs are set.
- Spread tomato sauce all over and top omelette with pepperoni, cheese and olives.
- Transfer omelette to oven and cook under grill setting under cheese is golden and bubbly.
- Cut into slices and serve immediately. Enjoy!
NOTES
- If you don’t have an oven-safe skillet, simply cook the omelette with a normal skillet, then transfer it onto a baking sheet before placing in oven.
- Feel free to use whatever toppings you like! Some other ideas are: mushrooms, bell pepper, ham, shredded chicken, shrimps, tomato, red onion, etc.
- Take care not to over-salt the eggs if you’re using toppings that are salty eg. pepperoni, olives, cheese.
