DESCRIPTION

These quick and easy mini pizza zucchini bites have all the cheesy goodness of pizza without the carbs. Perfect for parties or a fun weeknight dinner!

INGREDIENTS

  • 1 large zucchini
  • 50g pizza sauce
  • 80g shredded light mozzarella cheese

Toppings (optional)

  • Diced green bell pepper
  • Diced pitted olives
  • Mini pepperoni
  • Shredded basil

INSTRUCTIONS

  1. Preheat oven to 200°C / 400°F.
  2. Slice zucchini into 0.5 inch slices.
  3. Arrange zucchini slices on a nonstick baking sheet in a single layer. Top each slice with pizza sauce, shredded cheese and desired toppings.
  4. Bake for 8 minutes or until cheese is golden and bubbly.
  5. Remove from oven and serve immediately. Enjoy!

NOTES

  • Use large zucchinis for this recipe otherwise you won’t have enough surface area for the toppings. Alternatively, you can slice the zucchini diagonally to make the slices bigger.
  • Feel free to switch up the toppings! Other ideas include: lean ham, chicken, mushrooms, tomatoes, red onion.
  • If you can’t find mini pepperoni, you can just cut up regular sized pepperoni. Use a metal smoothie straw or small round cookie cutter to cut out perfect circles.
  • These are best eaten fresh but they can be kept in the fridge for up to 2 days and reheated in the oven before serving.
