Pizza Zucchini Bites

DESCRIPTION
These quick and easy mini pizza zucchini bites have all the cheesy goodness of pizza without the carbs. Perfect for parties or a fun weeknight dinner!
INGREDIENTS
- 1 large zucchini
- 50g pizza sauce
- 80g shredded light mozzarella cheese
Toppings (optional)
- Diced green bell pepper
- Diced pitted olives
- Mini pepperoni
- Shredded basil
INSTRUCTIONS
- Preheat oven to 200°C / 400°F.
- Slice zucchini into 0.5 inch slices.
- Arrange zucchini slices on a nonstick baking sheet in a single layer. Top each slice with pizza sauce, shredded cheese and desired toppings.
- Bake for 8 minutes or until cheese is golden and bubbly.
- Remove from oven and serve immediately. Enjoy!
NOTES
- Use large zucchinis for this recipe otherwise you won’t have enough surface area for the toppings. Alternatively, you can slice the zucchini diagonally to make the slices bigger.
- Feel free to switch up the toppings! Other ideas include: lean ham, chicken, mushrooms, tomatoes, red onion.
- If you can’t find mini pepperoni, you can just cut up regular sized pepperoni. Use a metal smoothie straw or small round cookie cutter to cut out perfect circles.
- These are best eaten fresh but they can be kept in the fridge for up to 2 days and reheated in the oven before serving.
