DESCRIPTION

INGREDIENTS

  • 1 cucumber
  • 1 avocado
  • 200g cooked crab meat
  • 1/2 lemon, juiced
  • 4 tbsp Kewpie mayo
  • 2 tsp Sriracha
  • Salt, to taste
  • White pepper, to taste
  • 1 tbsp furikake

INSTRUCTIONS

  1. In a bowl, mix together crab meat, Kewpie mayo and Sriracha until combined. Season to taste with salt and white pepper.
  2. Slice cucumber and avocado.
  3. Place 2-3 slices of avocado on each cucumber slice. Squeeze lemon juice over each one.
  4. Top each cucumber slice with crab mixture. Sprinkle furikake on top. Serve and enjoy!

NOTES

  • Try to use fresh or frozen (defrosted) crab meat if you can. Canned crab meat will also work in a pinch but won’t look as nice.
  • Feel free to adjust the amount of Sriracha according to your spice tolerance.
  • If making ahead of time, prepare everything as instructed but save furikake topping for the last minute so it doesn’t get soggy. Store covered in the fridge for up to 6 hours.
