DESCRIPTION
Curried tofu salad is delicious & a substitute for curried egg sandwiches! Curry powder has many health benefits such as reducing inflammation & improving blood sugar levels. The salad is great for sandwiches, wraps, or a topping for rice crackers.
INGREDIENTS
Vegan Curried Egg Salad
- 200g firm tofu
- 1 tbsp yellow mustard
- 1 tbsp tahini
- 1 tbsp lime juice
- 1.5 tbsp curry powder
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp tumeric
- 1/4 tsp paprika
- 1/2 tsp black salt
- 1/4 tsp white pepper
- Pinch of black pepper
Other Ingredients for Sandwich
- 2 slices wholegrain bread
- A few green lettuce leaves
INSTRUCTIONS
- Drain tofu and pat dry with a paper towel. Crumble it into a big mixing bowl with your hands until you get a "smashed egg" consistency.
- Add all other ingredients apart from the wholegrain bread. Mix until combined.
- Add crumbled tofu to mixing bowl and mix until combined.
- Assemble sandwich by layering one slice of bread, lettuce, vegan curried egg salad, and top with the second slice of bread. Enjoy!
NOTES
- The black salt is what gives an "eggy" flavor. You may substitute with regular salt if you like.
- Adjust the amount of seasonings to your preference.
- Use whatever bread you like! Sourdough will be another great option.
- The vegan curried egg salad will be great for wraps or a topping for rice crackers as well.
