INSTRUCTIONS
- Heat up a cast iron skillet or nonstick skillet over medium heat.
- Put a single sheet of rice paper on the skillet.
- Crack the egg onto the rice paper, and gently scramble and spread it all over the rice paper using a fork or spoon.
- Add chopped green onion and your desired toppings.
- Top with mayonnaise and sriracha if using.
- Once the egg is almost completely set, fold the pizza onto itself using a spatula.
- Remove pizza from heat and cut into two halves using a pair of scissors to make it easier to eat if you like. Serve immediately. Enjoy!
NOTES
- In Vietnam, this pizza is traditional cooked over hot charcoal. At home you can use a cast iron skillet to recreate the high heat environment. If you don't have one, just use a normal nonstick skillet.
- Go wild with the toppings! This recipe is very versatile, so use whatever you like to make it suit your dietary preferences.
- You can use spam instead of ham.
