This is my quick go to snack after my workout in the evening.
It is tasty, vegan and provide a lot of protein and fiber. (100g of black chickpea has around 23g of protein and 100g of mung sprouts has around 7g of protein.)
I usually use mung and black chickpea sprouts, but you can use sunflower, broccoli, and lentil sprouts if you prefer those.
Just soak them for 8 hours, then drain and wrap them in a muslin cloth for around 18-24 hours (do keeps the cloth moist) and they will sprout. You can boil them if you like but I prefer to eat them raw. (Make sure to boil them if the sprouts are store bought and not home grown, cuz you never know the conditions they are grown in)
Then you can add some chopped veggies of your choice, I like to put some red onions, tomatoes and cucumber. Season it with some salt and pepper, and a tablespoon of lemon juice (go for less or more to your liking). And you got yourself a healthy and tasty snack.
I like to eat it after my workout paired with my ginger tea.
