Bloating after few days of workout

I completed one challenge almost a week ago, I saw visible changes in my body, specifically in my belly. It looked toned and lost few inches as well. But within a week, I am seeing my belly looks bloated or like those inches are back even though I am doing intermittent fasting and eating mindfully. Can anyone please suggest how can I maintain my belly so I don’t gain inches back?
