Very confused about my calorie deficit

Soooo. Very confused. A safe calorie deficit is UNDER 500 kc?? What Ive been doing for 3 months now is 1850 intake and 630 deficit. I feel fine. I never go to bed hungry, I sometimes find myself not using my whole budget at the end of the night. If I don't workout, I burn 400 kc per day on average. If I do, I burn over 600 calories. I'm 84 kg and 167 cent. And 17 years old. This is formulated for -1.25 pounds a week. I havnt seen much of any weight loss except -6 pounds from the first month. I have been at a stand still for 2 months.
Help. 🤷‍♀️
(Also. How does everybody else track their calories during a workout because I use my Apple Watch. I dont know if this is notoriously inaccurate or if its me.)
