Bake fries eggplant with an garlicky dill Greek yogurt. It’s been a while since I last post. Life been busy but I just had the most randomly craved and combination meal this morning. I wanted fries or I opted out for something healthy like an eggplant. I know I would want a sauce to go with the fries eggplant so I decided to make an garlicky dill Greek yogurt for that protein and probiotics 💪🏽
First cut your eggplant to your liking. Then lightly sprinkle salt on the eggplant. Let it sit for at least 20min or longer for it to sweat out water and then pat dry and evenly coat your seasoning.
Seasoning for 1 eggplant:
4 tbsp olive oil
1/4 cup almond flour
1/4 finely grated Parmesan
1/2 tbsp smoked paprika
1/2 tbsp garlic powder
1/4 tsp cayenne pepper
Garlicky dill plain Greek yogurt:
3/4 cup plain Greek yogurt
Mince garlic ,Dill, Salt measured with you heart
(Optional 1 tbsp of chia seed) this I used chia seeds only because i originally supposed to make a Greek yogurt fruit bowl but decided to make something savory 😋
Cook at 425 for about 20min in oven

288 calories
30g of protein
And high on fiber
