Based off of a fresh vinegar salad or fresh salsa I came up with this delight last night! It's quick easy and tangy side or topper for fish, chicken, salad, pasta, grains, sandwiches, or to eat with chips, crisps or toast! Instead of chickpeas you could substitute fava beans, cucumbers, celery, cauliflower or any other firm vegetable of your choice to match the style of the rest of your meal. Most of the cook time on this recipe is for marinating and chilling so it can be done in tandem with other cooking tasks. You'll want a slightly mild or fruity vinegar for this. If you don't like vinegar you can substitute lemon or lime juice and still get that nice acidity to tame down the onions and bring it all together. Let me know if you have questions!
