Healthy peanut butter dates truffles

I love these!!! If you love peanut butter, you will love these😍

12 dates
3/4 cup almond flour
1/2 cup flax seeds
1/2 cup crushed peanuts
3 tbsp peanut butter
1 tsp vanilla
1/2-3/4 cup chocolate for dipping (chocolate chips or baking chocolate)

1. Put the dates in a microwave safe bowl and put a little water on the bottom, just so it covers it. ~3-4 tbsp. Microwave for 1 minute, let it stand a few mins and then microwave for another minute.
2. Take the bowl out of the microwave, add vanilla and mesh with a fork until it forms a paste, if it's too thick add a little water. You can also use a food processor.
3. Mix all if the dry ingredients. Add peanut butter and the dates and mix with your hands, or a spoon hehe. Form the dough into a ball. It should be stiff enough to form into little balls.
4. Divide in to 12-16 pieces
5. Melt the chocolate in the microwave. Start by doing 30seconds, take out, stir and ones its all melted, dip eaxh ball into the chocolate:) sprinkle some peanuts on top if you like!!!
