Here are some more of my thoughts on some of my favorite recipes I've made from the recipe section in the app. If you've made or end up making one of these, let me know! 💕 I'd love to hear how others did it! 💖
Jackfruit Tacos- 10/10! I really liked this one but as you can see, I added alot more toppings than just the avocado and sauce that are listed in the recipe. We used carb consious tortilla shells, which are only 25 cal. This recipe is rated suprisingly low in the app, but maybe thats because jackfruit is a weird ingredient? We also made the shredded tofu tacos, and the macros on that are just generally better. We are going to make that shredded tofu crumble very often going forward for my boyfriend to have in his meal preps Burritos for lunch throughout the week. Only vegan tacos left for us to try are the cauliflower ones!
Teriyaki sweet potato budah bowl- 10/10 very much enjoyed this recipe. I'm too lazy to rice a cauliflower or buy frozen riced cauliflower so I just steamed cauliflower florets. It all came together very well and was really great, and I loveeed the sweet potato and how it was cooked.
Apple Donuts- 8/10- I really enjoyed these with the yogurt topping, and eating them this way was so satisfying. I'm not a big peanut butter fan, but the macros are probably better that way 😭 took away some points because I had to get creative on how to remove the core from the slices. The off brand low sugar Vegan m&m toppings were my favorite to put on these. I just used random options I had on hand; I didn't try buying everything chloe had on hers.
Vegan Nachos- 9/10 get more Pickled Jalepenos than what the recipe calls for. It's definitely a big effort recipe but the leftovers were my lunch for the rest of the week and it was still so delicious each time! We will definetly be making this again. We made a lot of the vegan sour cream, and that will last for a while I hope!
Tofu and Eggplant sandwich- 6/10 it's not super practical as a sandwich when you put stuff on the top bun where your hands would normally grab, so idk about that. I loved the flavors though, and if/when I make it again, I think I will try to add the sauce and seasoning inside the tofu buns. But this recipe introduced me to 2 things; tofu as a bun, and gomaiso which can be used as a vegan parmesan substitute!
