Not a major recipe or anything but my collegues are always amazed at my super easy peasy lunch lol.
I make a salad box and store it in the fridge which lasts me 3 days. I just pop it in my lunchbox in the morning of my shift so I don't need to make it from scratch.
The base is
1. Lettuce
2. Plum tomatoes
3. Red pepper (looks pretty)
4. Cucumber
5. Olives (natural oils act as a dressing)
6. Red onion or salad onion (if I can be bothered to cut them).
I usually have tuna with it but sometimes I have roast chickpeas, leftover chicken or turkey or turkey bacon.
Whatever fruit I have gets squeezed in for my snack and it's just whatever fruit I have in.
It's cheap, low calorie and healthy - and delicious I love it. You don't need a fancy meal to be good!
p.s excuse my fork our canteen doesn't provide them anymore so my fork takes a ride with the packed lunch xD
