I’ve been looking for a healthy but also yummy recipe for pancakes and finally found one and adjusted it! It’s not the prettiest but so delicious, it turned out not too sweet with a hint of vanilla and the protein powder I used.. so if you like sweet pancakes add some syrup or berries on top or your favorite flavor of protein powder. This recipe makes 2 servings, around 700 calories and 20-25 grams of protein. 1 serving is approximately 350 calories 10-15 grams of protein depending on the protein that is used! If you wish to have only 1 serving cut the recipe in half:)
Here’s the recipe and instructions…
2 Eggs
30g Sugar
1 teaspoon vanilla extract
60g greek yogurt
50g All Purpose Flour
1 scoop of protein powder
Instructions:
Beat eggs, sugar and vanilla together until doubled in size, add yogurt and mix for only 5 seconds not to let too much air out. Add flour and protein powder of your choice.
***dough is supposed to be runny, it cooks super quick so keep an eye out on your pancake and don’t forget to grease your pan with some oil because they will stick!
Top it off with syrup, Greek yogurt, fruit, etc.
