If you love boba, you have to try this quick & easy, 3-ingredient strawberry boba! Made with real fruit, the boba pearls taste like fresh, juicy strawberries and are perfectly chewy. Serve them with strawberry milk, matcha latte or whatever you like!

40g strawberries
40g tapioca flour
2 tbsp monk fruit erythritol sweetener
  1. Add strawberries and monkfruit erythritol sweetener to a high speed blender. Blend until completely smooth.
  2. Transfer strawberry puree to a large mixing bowl. Stir in tapioca starch until a dough forms.
  3. Using your hands, shape the dough into little round balls. After all the dough is used up, lightly dust the boba with some tapioca flour. Get rid of excess tapioca flour using a sieve.
  4. Prepare an ice bath.
  5. Bring a large pot of water to a boil. Add strawberry boba and cook for 1 minute or until they float. Drain and transfer to ice bath immediately. Drain again and the strawberry boba is ready for use!
Notes
  • I served the strawberry boba with a strawberry milk I made by blending fresh strawberries with skim milk. Some other ideas are: soy milk, fruit tea, green tea, matcha latte, etc. The possibilities are endless!
  • I found 2 tbsp of monkfruit erythritol sweetener sweetens these boba pearls just the perfect amount, but feel free to add more or less depending on your taste preference.
  • Feel free to substitute monkfruit erythritol sweetener with any other granulated sweetener of choice.
