Place all ingredients for the pancakes in a blender. Blend until smooth. Let batter rest for 5 minutes to thicken.
Heat up a nonstick skillet over medium-low heat. Grease the skillet with a little bit of oil using a paper towel. Spoon 1/4 of the batter onto the skillet. Cook for 2 minutes on each side. Repeat with the rest of the batter.
Plate up your pancakes and top with sliced banana and maple syrup. Enjoy!
Notes
Feel free to omit or substitute the sugar-free maple syrup with any other sweetener or syrup of choice as topping. The pancakes are already quite sweet from the bananas so you can get away without sweetening them further.
Go crazy with toppings! Other suggestions are fresh berries, chopped nuts, shredded coconut, Greek yogurt, your favorite nut butter, etc.
