These easy cheesy broccoli fritters only require a handful of ingredients to make. They are low carb, gluten-free and packed full of nutrients. A delicious way to sneak some greens into delicious little bites!

1 broccoli, stem removed
2 eggs
60g shredded cheddar
30g almond flour
1 clove garlic
1 tsp onion powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp pepper
1 tbsp olive oil
-Fresh parsley for garnish (optional)
Cut broccoli into florets. Reserve stem for other recipes.
Process broccoli in a food processor into very small pieces (size of rice grains). It might be easier to do this in a few batches, depending on the size of your food processor.
In a large mixing bowl, add all ingredients except for olive oil. Mix until combined thoroughly.
Heat up 1/2 tbsp olive oil in a non-stick skillet over medium-low heat. Spoon a large spoonful of batter into the skillet and flatten slightly with the back of the spoon. Cook for 2-3 minutes on each side.
Repeat until all batter is used. Adding more oil in between batches if necessary.
Transfer to serving plates. Garnish with fresh parsley if desired. Enjoy!
Notes
Don't discard the broccoli stem! You can cut it up and use it in stir fry's, stews or soups.
You may substitute cheddar with another semi-hard or hard cheese such as jack, colby, or even grated parmesan.
To make this dairy-free, you may omit cheddar or substitute with nutritional yeast. However, please be gentle when flipping the fritters as the batter will not hold together as well without the cheese as a binder.
If you don't like the slightly earthy flavor of raw/undercooked broccoli, you may first cook the broccoli by blanching it for 2 minutes in boiling water before processing in food processor and proceeding with the recipe.
