Preheat oven to 200°C / 400°F and lightly grease a nonstick baking tray.
Finely dice onion and grate carrot.
Drain chickpeas and mash with a fork.
Add all ingredients into a large mixing bowl and mix until well combined.
Take 2 large spoonfuls of mixture and form a patty using your hands. Place on greased baking tray. Repeat until all the mixture is used up.
Bake for 10 minutes, flip, then bake for 10 more minutes or until golden brown and cooked through.
Meanwhile, prepare your burger toppings by washing and drying lettuce leaves and slicing red onion into thin rings. Also toast burger buns on a dry nonstick skillet.
Assemble your burger: sandwich a chickpea burger patty, lettuce, red onion, sriracha and aioli between toasted wholewheat burger buns. Enjoy!
