If you think you’re over baked oats, you have not tried this one! A molten version inspired by chocolate lava cake, with a gooey chocolatey center, but still secretly healthy while being free from sugar, gluten, and dairy. Yum!

Ingredients (1 serving)

50g rolled oats
60ml soy milk
3 tbsp applesauce
1 tbsp monk fruit erythritol sweetener
1 tbsp cocoa powder
1/2 tsp baking powder
1/4 tsp vanilla extract
-Pinch of salt
20g sugar free dark chocolate
Preheat oven to 350°F / 180°C.
Place all ingredients apart from chocolate bar in a food processor. Process on high until smooth.
Transfer mixture to a ramekin. Break up chocolate bar into smaller pieces and stuff them in the center.
Bake for 10 minutes or until the top is set but the center is still gooey. Enjoy immediately.
Notes
This chocolate lava baked oatmeal is best enjoyed fresh, so don't make too much at a time!
Feel free to substitute monkfruit erythritol sweetener with any other sweetener of choice.
Applesauce may be substituted with equal amount of mashed banana, mashed sweet potato, pumpkin puree or yogurt.
Feel free to substitute soy milk with any other milk of choice.
