Inspired by the popular snack from Trader Joe’s, this easy dark chocolate edamame bark is the ultimate high-protein sweet treat. Only 2 ingredients and 5 minutes required!

Ingredients (12 servings)
150g dried roasted edamame, lightly salted
200g dark chocolate
Line a baking tray or a clean bench top with parchment paper. Spread edamame out so they are in a single layer.
Roughly chop up chocolate and place in a large microwave-safe bowl.
Microwave chocolate, stopping every 15-20 seconds to stir, until only small pieces of chocolate are still visible in the bowl. Take the bowl out and stir well until the last bit of chocolate is melted.
Pour melted chocolate over edamame, stir gently to ensure each edamame is well coated.
Let set in room temperature until chocolate is completely hardened.
Chop into smaller pieces and store in an airtight container in a cool, dry place.
If you live in warmer climate, you may need to let the chocolate set in the fridge.
Feel free to use sugar-free chocolate if you want to make this treat sugar-free.
If your edamame is unsalted, you may sprinkle some sea salt flakes on top of the chocolate before it sets completely. Don't skip this as salt enhances the flavor of dark chocolate!
