This delicious corn sauté with bacon bits and scallion is going to become one of your favorite side dishes! It's quick and easy and only requires 3 ingredients to throw together. You can also use ham in place of bacon if you have leftovers from holiday dinners too!

Ingredients (4 servings)

200g fresh corn kernels
100g nitrate-free bacon
2 stalks scallions
60ml water
-Salt, to taste
-Pepper, to taste
  1. Chop scallions and small dice bacon.
  2. Heat up a large nonstick pan over medium-high heat and add bacon. Sauté until golden brown and the fat is rendered. Remove bacon from heat and set aside. Drain and reserve bacon grease.
  3. Add 1 tbsp bacon grease to the pan along with corn kernels. Sauté until lightly golden, and add half the water. Continue cooking on low heat for 5 minutes, stirring occasionally.
  4. Add the rest of the water and continue cooking for 5 more minutes or until all the water has evaporated and corn is cooked to desired doneness.
  5. Stir in bacon and scallions and season to taste with salt and pepper. Serve warm. Enjoy!
Notes
  • Fresh corn kernels will work best for this recipe. However, if you only have frozen or canned corn on hand, they will also be fine. Be sure to first defrost (if using frozen) or drain (if using canned) before using.
  • Depending on how fatty your bacon is, you might have more bacon grease than is needed. Adjust the amount you use according to your dietary requirements.
  • You can also use ham in place of bacon if you have leftovers from holiday dinners too.
