Chop scallions and small dice bacon.
Heat up a large nonstick pan over medium-high heat and add bacon. Sauté until golden brown and the fat is rendered. Remove bacon from heat and set aside. Drain and reserve bacon grease.
Add 1 tbsp bacon grease to the pan along with corn kernels. Sauté until lightly golden, and add half the water. Continue cooking on low heat for 5 minutes, stirring occasionally.
Add the rest of the water and continue cooking for 5 more minutes or until all the water has evaporated and corn is cooked to desired doneness.
Stir in bacon and scallions and season to taste with salt and pepper. Serve warm. Enjoy!
