This quinoa pilaf is so easy to make and is a great switch from your normal rice pilaf! It's great as a side dish or you can double it up and make it a main meal.

Ingredients (4-6 servings)

180g quinoa
240ml low-sodium vegetable broth
170ml water
1 bunch kale, chopped
1 tbsp olive oil
-Salt, to taste
-Pepper, to taste
  1. Rinse quinoa well and drain.
  2. In a large non-stick skillet, heat up olive oil over medium heat. Add quinoa and cook, stirring constantly to let the water evaporate, and toast the quinoa for about 2 minutes.
  3. Add vegetable broth and water and bring to a boil.
  4. Lower heat to bring mixture to a simmer. Cover and cook for 10 minutes.
  5. Add chopped kale and cook for 5 minutes.
  6. Turn off the heat and let quinoa continue steaming, covered, for 5 more minutes.
  7. Taste and season with salt and pepper if desired.
Notes
  • Think of this recipe as a blank canvas and add spices and herbs as you wish! Eg. Italian herbs or chopped fresh cilantro would be great additions in this.
  • If there is still liquid left in the skillet after steaming in step 6, cook for a few minutes longer over medium-low heat, stirring constantly, until all the liquid is evaporated.
  • If the quinoa is still a bit hard, simply steam it for a bit longer, adding more water as required.
  • Leftovers can be stored in the fridge for 3-5 days.
