A flavorful yet light and healthy low-carb burrito bowl that is ready in under 30 minutes. It’s loaded with seasoned lean ground beef, cauliflower rice, avocado, tomato, lettuce and cheese. It’s great for meal prep too!

Ingredients (4 servings)

Beef
500g lean ground beef
1 onion
1/2 tsp smoked paprika
2 tsp cumin
1/4 tsp chilli powder
1/4 tsp garlic powder
1/4 tsp black pepper
-Salt, to taste
1/2 tsp oil
Cauliflower rice
1 small head cauliflower
-Salt, to taste
-Pepper, to taste
1/2 tsp oil
Salad ingredients
1 small head lettuce
2 servings of guacamole
2 tomatoes
50g grated cheese
-Hot sauce (optional)

Prepare salad ingredients

  1. Finely chop lettuce and dice tomato.
  2. Make guacamole.

Prepare cauliflower rice

  1. Grate cauliflower into “rice” using a box grater. Alternatively, you can use a food processor for this.
  2. Heat up oil in a large nonstick skillet over medium heat. Add riced cauliflower, salt and pepper. Cook for 5-6 minutes or until desired tenderness.
  3. Remove from heat and set aside.

Prepare beef

  1. Small dice onion.
  2. Heat up oil in a large nonstick skillet over medium heat. Add onion and sauté until fragrant and transparent.
  3. Add ground beef, breaking it up with your spatula, and cook until browned.
  4. Add the rest of the ingredients for the beef and a splash of water. Stir to combine and continue cooking for 2-3 minutes.
  5. Remove from heat.

Assemble

  1. Divide lettuce between serving bowls. Then top with diced tomato, cauliflower rice, ground beef, cheese, guacamole and hot sauce (if using). Enjoy!
Notes
  • Leftovers can be stored in an airtight container in the fridge for 2-3 days. Store the cooked ground beef separate from other ingredients, so that you can easily reheat the meat and then assemble with salad when you’re ready to eat.
  • Feel free to substitute or add any other toppings you like! Black beans, corn, jalapeño are some options.
  • Feel free to substitute beef with any other protein of choice. Turkey mince, chicken, shrimps or tofu would be great for this recipe too.
  • Feel free to adjust amount of chilli powder according to your spice tolerance.
  • Feel free to omit or substitute cheese with a dairy-free cheese to suit your dietary requirements.
