Chicken fried rice topped with an omelet and homemade tomato sauce. You get the juiciness from the chicken, softness from the eggs and a hint of sweet and sharpness from the homemade sauce. This is a Japanese-inspired recipe that's hearty, healthy and sugar free.

Ingredients (1 serving)

Fried rice
250g cooked brown rice (1 day old)
75g chicken breast
1/4 onion
1/4 cup frozen mixed vegetables
1 tbsp homemade tomato sauce (see below)
1/2 tsp olive oil
-Salt, to taste
-Pepper, to taste
Homemade tomato sauce
120ml passata
1/4 tsp onion powder
5-10 drops stevia
1/4 tsp white pepper
-Salt, to taste
2 eggs, beaten
1/2 tsp olive oil

Make tomato sauce

  1. In a pot, mix together all ingredients for the tomato sauce until combined.
  2. Cook over medium heat until the mixture thickens to desired consistency.
  3. Taste and season with salt and more stevia if necessary. Remove from heat and set aside.

Make fried rice

  1. Defrost frozen mixed vegetables.
  2. Dice onion and chicken breast.
  3. Heat up olive oil in a non-stick skillet over medium-low heat. Add diced onion and stir fry until fragrant and onions turn translucent.
  4. Add diced chicken to skillet and stir fry until cooked.
  5. Add mixed vegetables to skillet and stir fry for 1 minute.
  6. Add 1 tbsp tomato sauce to skillet and stir to mix well.
  7. Add rice to skillet and stir to mix well. Stir fry for 1-2 minutes until rice appears sufficiently dry.
  8. Season with salt and pepper. Remove from heat and set aside.

Make omelette

  1. Heat up olive oil in a clean non-stick skillet over medium heat. Add beaten eggs and scramble slightly by gently pushing the cooked edges to the middle. Stop doing this as soon as the eggs appear to be setting all over. Take care not to break the omelette as we want a perfect round circle!
  2. Remove from heat.


  1. Place fried rice in a small round bowl. Gently pack it in tightly. Place a plate on top of the bowl, then quickly flip them over so the bowl is on top of the plate. Remove the bowl from the plate gently and now you should have a perfect looking mount of rice! This step is optional. You can simply place the rice directly on the plate if you don't care about how it looks.
  2. Gently slide omelette out of the skillet and on top of the mount of fried rice.
  3. Top with a generous ladleful of tomato sauce. Enjoy!
  • Use rice that is at least 1 day old for the best fried rice texture!
  • The frozen vegetable mix I used consists of corn, peas and diced carrots, which are traditionally the vegetables used in Japanese omurice. But feel free to substitute with whatever vegetables you have on hand!
  • You may substitute stevia with any other sweetener of choice. Or you can use ketchup if you want but keep in mind store-bought ketchup can be quite high in sugar!
