This peanut butter chia pudding is delicious and only requires 5 ingredients to make! If you love peanut butter, t’s the perfect quick and healthy meal to prepare before going to bed so you have breakfast ready to go the next day!

Ingredients (2 servings)

Peanut butter chia pudding
250ml oat milk
2 tbsp peanut butter
3 tbsp chia seeds
10 drops liquid stevia
1/4 tsp vanilla extract
Toppings (optional)
-Peanut butter
-Strawberries, diced
-Blueberries
-Cocoa nibs
Combine all ingredients in a big jar or bowl and mix very well.
Cover and refrigerate for at least two hours or overnight.
When ready to serve, give chia pudding a good stir, divide into two servings, then with toppings and enjoy!
Notes
I used oat milk for this but any plant milk will work for this recipe.
Feel free to substitute peanut butter with reconstituted PB2 for a lower fat version!
If you don’t like peanut butter, try it with any other nut or seed butters!
Feel free to substitute stevia with any other sweetener of choice.
Feel free to experiment with other toppings of choice! Some other ideas are: raspberries, blackberries, banana, chopped nuts, etc.
