Quick and easy savory cottage cheese bowl topped with fresh vegetables, egg and chia seeds for a protein- and nutrient-packed breakfast to fuel you all day. Suitable for meal prep too!

200g cottage cheese
1/2 yellow bell pepper
10 cherry tomatoes
4 baby cucumbers
1 tbsp chia seeds
2 Hard boiled eggs (optional)
-Salt, to taste
-Pepper, to taste
  1. Small dice bell pepper, slice cherry tomatoes in halves and thinly slice cucumbers.
  2. Place eggs in a pot and cover with cold water. Bring to a boil, reduce heat to medium and set a timer. Cook for 4 minutes for soft boiled, and 6-8 minutes for hard boiled.
  3. Remove eggs from heat, and submerge in an ice bath. This will stop them from cooking further and also make them easier to peel. When cool enough to handle, peel the eggs.
  4. Divide cottage cheese into two serving bowls. Top each with bell pepper, cherry tomatoes, cucumber, chia seeds and eggs. Season to taste with salt and pepper. Enjoy!
Notes
  • Feel free to switch up the toppings! Some other suggestions are: avocado, carrots, pickled onion, smoked salmon, chives, spring onion, roasted nuts and seeds.
  • Feel free to cook the eggs however you like! Soft boiled, poached or sunny-side-up would be nice too if you are having the bowl fresh. Although if meal prepping, I would suggest hard boiled eggs.
