A classic Chinese comfort dish that pairs soft, creamy scrambled eggs with meaty shrimps. Simple, delicious and high-protein! Perfect with some steamed rice and vegetables.

100g peeled, deveined shrimps
4 eggs
1 green onion
1 tbsp olive oil
-Salt, to taste
1 tsp soy sauce, to serve
Chop green onion.
Beat eggs in a bowl along with salt.
Pat dry shrimps with paper towels.
Heat up 1 tsp olive oil over medium heat in a nonstick skillet. Add shrimps and cook until they change color. Remove from heat and set aside.
Heat up the rest of the oil in the skillet. Add beaten eggs and scramble, using your spatula to gently push the curdled egg towards the center while letting the uncooked egg to flow to the edge of the skillet. Repeat until all of the eggs are almost done to your liking, add shrimps back to skillet and let sit for about 30 seconds to warm up.
Remove from heat and serve immediately. Drizzle soy sauce on top and garnish with chopped green onion. Enjoy!
Notes
This dish is perfect served over steamed rice and some vegetables.
This dish is best enjoyed fresh as the scrambled eggs will dry up overtime so don’t cook too much!
Feel free to cook the scrambled eggs more if you prefer them more well-done.
