2 eggs
80g smoked salmon
10g baby spinach
2 tbsp light sour cream (optional)
-Pinch of salt
-Black pepper, to taste
Beat eggs in a bowl. Season with a pinch of salt and black pepper.
Heat up a nonstick skillet over medium heat. Pour in half of the beaten eggs and tilt the skillet to coat the surface evenly. Once the bottom is set, carefully flip and cook the other side until set. Slide omelet out of the skillet onto a chopping board or a clean, flat surface.
Repeat with the rest of the beaten eggs.
Spread light sour cream on top of each omelet, and top with smoked salmon and baby spinach. Roll them up like a Swiss roll, then cut into bite-sized pieces. Enjoy!
Notes
For dairy-free, omit sour cream or substitute with non-dairy sour cream or hummus. If you omit the sour cream, you may use toothpicks to hold the omelet rolls in place and keep them from falling apart.
If you don’t like smoked salmon, try sliced turkey or ham!
