This strawberry cheesecake inspired overnight oats is filled with instant strawberry compote, creamy low-fat Greek yogurt, crumbled biscuits and fresh strawberries. Delicious and healthy, it's a guaranteed sweet start to your morning!

45g rolled oats
120ml low fat milk
1 tbsp chia seeds
4 strawberries
1 tbsp monk fruit erythritol sweetwner
2 tbsp low-fat Greek yogurt
Toppings
1 strawberry
2 tbsp low-fat Greek yogurt
1/2 graham cracker, crumbled
Make strawberry compote - cut strawberries in halves and place in a microwave-safe bowl. Microwave on high for 1 minute, stir, then microwave for another 30 seconds. Let cool.
Add strawberry compote and the rest of the overnight oats ingredients to a jar and stir to combine, making sure all the oats are submerged.
Cover and refrigerate overnight or for at least 2 hours.
The next morning, give everything a good stir and top with toppings. Enjoy!
Notes
For vegan/ dairy-free, substitute low-fat milk with any non-dairy milk and Greek yogurt with coconut yogurt.
Use old fashioned rolled oats for the best texture.
You can replace graham crackers with any biscuit of choice.
Feel free to substitute monkfruit erythritol sweetener with any other sweetener.
