Divide chia seeds, almond milk, coconut sugar and stevia evenly across four jars or containers. Stir each one to combine.
In the first jar, add almond extract, salt and lemon juice. Stir to combine and let set in the fridge, covered, for at least 2 hours or overnight.
In the second jar, add 1 tsp cocoa powder. Stir to combine and let set in the fridge, covered, for at least 2 hours or overnight.
In the third jar, add 1/2 tbsp cocoa powder and espresso shot. Stir to combine and let set in the fridge, covered, for at least 2 hours or overnight.
In the fourth jar, add 1.5 tbsp cocoa powder and vanilla extract. Stir to combine and let set in the fridge, covered, for at least 2 hours or overnight.
When ready to serve, assemble by layering the four chia puddings in a tall glass, starting with the darkest colored one (fourth jar) in the bottom. Top with an optional dusting of cocoa powder and some dark chocolate shavings. Enjoy!
