Lightly spiced with curry powder and zesty lime, these roasted cashews may seem fancy but are so easy to make. Not only are they a great snack, try them chopped up as a crunchy topping on salads, noodles or nourish bowls as well!

Ingredients (8 servings)

250g raw cashews
1 lime, juiced and zested
1 tsp coconut oil, melted
1 tbsp curry powder
2 tsp coconut sugar
1/4 tsp smoked paprika
1/4 tsp salt
  1. Preheat oven to 150°C / 300°F and line a baking sheet with parchment paper.
  2. Spread cashews out on lined baking sheet in a single layer. Roast for 5 minutes.
  3. Meanwhile, in a large mixing bowl, mix together lime juice, melted coconut oil, curry powder, coconut sugar, smoked paprika and salt.
  4. Carefully remove cashews from the oven and add to mixing bowl. Toss until each cashew is well coated in the spice mixture. Return cashews to baking sheet and roast for another 10-15 minutes or until just golden brown. Keep a close eye on them towards the end so they don’t burn.
  5. Remove cashews from oven. Grate lime zest all over and allow cashews to cool completely before eating or storing in an airtight container.
Notes
  • Roasted cashews will keep in an airtight container in a cool and dry spot for 2-3 weeks.
  • Coconut oil is recommended for this recipe for its flavor. However you may substitute it with any other neutral-tasting oil. I don’t recommend omitting it for this recipe otherwise the seasonings won’t stick.
  • Feel free to substitute coconut sugar with any other sweetener of choice to make this recipe sugar-free.
  • Not a fan of cashews? Try making this with other nuts such as almonds!
