Probably the easiest ice cream recipe you will ever come across! You only need 2 ingredients and 5 minutes to make the this creamy, healthy vegan peanut butter banana ice cream!

Ingredients (2 servings)

3 bananas, cut and frozen
1 tbsp peanut butter
Toppings (optional)
1 tsp Peanut butter, drizzled
2 ounces Chopped roasted peanuts
Place all ingredients in a food processor or high-speed blender and blend for 1-2 minutes until smooth and creamy, stopping to scrape the sides if necessary. A tamper will help with the process if you have one.
Serve immediately if you like a soft serve texture. Or alternatively you can freeze the mixture for 30-60 minutes to firm up a bit if you prefer a more ice-cream-like texture.
Top with a drizzle of peanut butter and some chopped roasted peanuts if you want!
Notes
Best to serve right away for the best texture. But if you must, store ice cream in an air-tight container in the freezer for up to 1 month. Thaw for 30 minutes before scooping and serving.
Feel free to experiment with a different nut/seed butter if you don't like peanut butter!
