Medjool dates stuffed with peanut butter and coated in dark chocolate. If you like snickers you'll love these vegan snickers stuffed dates! They're deliciously sweet but contain no added sugar, and are super quick & easy to make.

10 Medjool dates, pitted
3 tbsp peanut butter
80g sugar-free dark chocolate, finely chopped
2 tbsp chopped peanuts (optional)
Fill each pitted date with peanut butter. You'll need about 1/2 tsp of peanut butter for each date, depending on the size of your dates. Place filled dates on a plate and chill in the freezer for 10 minutes.
Put dark chocolate in a microwave-safe bowl. Melt chocolate in the microwave. Alternatively, you can melt the chocolate using a double boiler.
Line a tray or a large plate with parchment paper.
Take dates out of the freezer. Dip each one in the melted chocolate using a fork, let excess chocolate drip off, then transfer to parchment paper lined tray.
Top stuffed dates with some chopped peanuts if you wish.
Let the chocolate set in the fridge for 30 minutes.

Notes
If you don't like peanut butter, feel free to substitute it with other nut or seed butter.
Feel free to decorate these with chopped nuts, cacao nibs, or by drizzling some melted chocolate on top!
I used sugar-free dark chocolate but feel free to use any other chocolate that suits your dietary needs.
Store these stuffed dates in an airtight container in the fridge for up to 1 week.
