Dashi is a Japanese soup stock. If you don’t have dashi or don’t want to buy it because you don’t use it often, you may substitute with dashi powder. Simply dissolve 0.5-1 tsp dashi powder in 240ml water to make instant dashi.
You may substitute the soft tofu and wakame or add any other optional mix in’s such as firm tofu, tofu pocket strips, spinach, mushrooms, etc.
Make sure you don’t overcook the soup after adding miso paste in order to preserve the taste and nutrients of miso.
