Spaghetti squash, also known as noodle squash or squaghetti, is such a fun vegetable to eat and super easy to prepare! Once cooked, the flesh can be scooped out to look like strands of spaghetti, thus making it an excellent substitute for spaghetti! Serve it with your favorite pasta sauce and toppings or as a fun side dish.

Ingredients (2 servings)

1 spaghetti squash
1 tsp olive oil
-Salt, to taste
-Pepper, to taste
  1. Preheat the oven to 400°F / 200°C.
  2. Slice spaghetti squash into halves lengthwise. Scoop out the seeds.
  3. Drizzle the inside with a little bit of olive oil and rub with your fingers to spread the oil evenly.
  4. Sprinkle with salt and pepper.
  5. Transfer spaghetti squash to a baking sheet, with the cut side facing down. Bake for 30-40 minutes.
  6. Carefully remove from the oven. Let cool slightly before handling.
  7. Using a fork, shred the flesh into strands of “spaghetti.” Season to taste with more salt and pepper if desired.
  8. Serve with your favorite pasta sauce and toppings or as a fun side dish. Enjoy!
